An elegant fusion of tropical pineapple, historic Old Tom Gin, and California botanical-infused Chaparral Amaro, crowned with a fragrant touch of nutmeg. This cocktail captures the clean, herbal essence of a volcanic breeze.

Another creation of our owner and gifted Mixologist Jeremy this drink was crafted to showcase the unique flavors of the chaparral Amaro but it also gave us a chance to play with our favorite Green Hook Old Tom Gin.

Old Tom Gin is the bridge between Dutch genever and the London dry gin we know today. Popular in 18th- and 19th-century England, it earned its name from wooden plaques shaped like black cats (“Old Toms”) mounted outside pubs, where patrons could insert a coin and receive a shot through a pipe—an early form of to-go service. Sweeter and fuller-bodied than dry gin, Old Tom was the go-to spirit during the golden age of cocktails, featured in classics like the Tom Collins and Martinez. It fell out of favor for nearly a century but has made a well-deserved comeback, bringing depth and character to modern and vintage recipes alike.
